Description

Sweet and tangy Rhubarb Compote made with fresh rhubarb, sugar, and vanilla. Perfect for pancakes, yogurt, desserts, and breakfast bowls.


Ingredients

Scale

1 pound rhubarb stalks

1/2 cup granulated sugar

1 vanilla bean or 1 teaspoon vanilla extract

1/4 teaspoon kosher salt


Instructions

1. Wash and chop the rhubarb into 1/2-inch pieces

2. Place rhubarb into a medium saucepan

3. Add sugar, vanilla, and salt

4. Cook over medium heat until sugar dissolves

5. Reduce heat and simmer for 8 minutes

6. Stir occasionally until rhubarb softens

7. Remove from heat and cool for 10 minutes

8. Discard vanilla bean pod if used

9. Serve warm, chilled, or at room temperature

Notes

Store in refrigerator up to 1 week

Freeze up to 3 months
