4 ears of fresh corn, husked 1/2 cup mayonnaise (or Greek yogurt) 1/2 cup cotija cheese, crumbled 1 tablespoon chili powder 1 tablespoon fresh lime juice 2 tablespoons chopped cilantro (optional) Salt and pepper to taste Lime wedges for serving


Instructions

1. Husk and clean the corn thoroughly. 2. Preheat your grill to medium-high heat. 3. Grill the corn for 10–15 minutes, turning regularly until slightly charred. 4. In a bowl, mix mayo, cotija, lime juice, chili powder, salt, and pepper. 5. Slather the mixture over the hot grilled corn evenly. 6. Sprinkle with cilantro and serve with lime wedges.
