Description

These Jack-O-Lantern Hand Pies are a spooky, flaky Halloween treat filled with either bourbon apple or roasted blackberry. Easy to make, fun to decorate, and perfect for parties or baking with kids.

2ยฝ cups all-purpose flour 1 tbsp granulated sugar 1 tsp kosher salt 2 sticks (8 oz) unsalted butter, cold and diced 6โ€“9 tbsp ice water 1 egg, beaten for egg wash ยผ cup turbinado sugar (optional) 2 large honeycrisp apples, peeled and diced 3 tbsp salted butter 2 tbsp bourbon 1 tsp vanilla bean paste ยฝ tsp ground cinnamon โ…” cup brown sugar 18 oz fresh blackberries โ…“ cup granulated sugar 1 tsp vanilla extract


Instructions

1. In a stand mixer, combine flour, sugar, and salt. Add butter and mix until coarse crumbs form. 2. Drizzle in ice water until dough clumps together. Divide in two, wrap in plastic, and chill 1 hour. 3. For the apple filling, cook butter in a pan until browned. Add apples, bourbon, vanilla, cinnamon, and sugar. Cook 5โ€“7 minutes until thick. Cool. 4. For the blackberry filling, roast berries at 400ยฐF for 30 minutes. Simmer with sugar and vanilla for 10 minutes. Cool completely. 5. Roll dough to 1/8-inch thickness. Cut out pumpkin shapes with cookie cutter. Chill 10 minutes. 6. Carve jack-o-lantern faces on half the cutouts. Place non-face cutouts on a tray and spoon 1ยฝ tbsp of filling in the center. 7. Brush edges with egg. Place face cutouts on top and seal with a fork. 8. Brush tops with egg and sprinkle turbinado sugar. Bake at 375ยฐF for 25 minutes until golden brown. 9. Cool on wire rack and serve warm or at room temperature.

Notes

You can use canned pie filling to save time. Swap bourbon with apple juice for a kid-friendly version. Freeze assembled pies before baking and bake straight from frozen. Try savory fillings like brie and cranberry or butternut squash with goat cheese.
