A high-protein breakfast bake combining creamy cottage cheese, sweet blueberries, and hearty oats for a nutritious and delicious morning meal.
Ingredients
2 cups low-fat cottage cheese (room temperature)
2 large eggs
1/4 cup honey or maple syrup
1 teaspoon vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/2 cup rolled oats
1/2 cup almond milk or milk of choice
1 1/2 cups fresh or frozen blueberries
1/4 cup chopped nuts (optional โ almonds or walnuts)
1 tablespoon chia seeds (optional)
Cooking spray or butter for greasing
Instructions
1. Preheat oven to 350ยฐF (175ยฐC) and grease a 9ร9-inch baking dish.
2. In a large bowl, whisk cottage cheese, eggs, honey or maple syrup, vanilla, cinnamon, and salt until smooth.
3. Stir in rolled oats and almond milk. Let rest 5 minutes.
4. Fold in blueberries, nuts, and chia seeds gently.
5. Pour mixture into baking dish and spread evenly.
6. Bake for 40 to 45 minutes or until golden and set.
7. Cool for 5 to 10 minutes before slicing.
8. Serve warm and enjoy.
Notes
Can be assembled the night before and baked in the morning.
Store covered in the fridge for up to 4 days.
Frozen berries can be used without thawing.
Substitute ricotta for cottage cheese or Greek yogurt for a lighter option.
For gluten-free version, use certified GF oats.
