Ingredients
Cake:
1 ½ cups all-purpose flour
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¼ teaspoon salt
¾ cup unsalted butter, softened
1 cup granulated sugar
2 large eggs
1 teaspoon vanilla extract
½ cup sour cream
2 medium apples, peeled, cored, chopped
Crumb Topping:
1 cup all-purpose flour
1 teaspoon ground cinnamon
¼ teaspoon salt
½ cup unsalted butter, cold and cubed
½ cup brown sugar, packed
¼ cup granulated sugar
Cinnamon Apple Drizzle:
1 tablespoon unsalted butter
½ cup brown sugar, packed
1 teaspoon ground cinnamon
2 tablespoons milk
Pinch of salt
Instructions
1. Preheat oven to 350°F (175°C), grease or line a 9×9 pan.
2. Whisk flour, baking powder, baking soda, cinnamon, and salt.
3. Cream butter and sugar until fluffy.
4. Add eggs one at a time, then vanilla.
5. Alternate adding dry mix and sour cream, mix until just combined.
6. Fold in chopped apples.
7. Make crumb topping by cutting butter into flour, sugars, cinnamon, and salt.
8. Spread batter into pan, top with crumb mixture.
9. Bake 55–65 minutes until golden and set.
10. Cool 15 minutes, transfer to rack.
11. Make drizzle by melting butter with sugar, cinnamon, milk, and salt.
12. Spoon drizzle over cooled cake and serve.
Notes
Use tart apples for balance. Substitute dairy-free ingredients if needed. Skip crumb topping for a plain apple cake.
