Description
This Amish Harvest Casserole is a cozy, slow-cooked classic made with ground beef, tender vegetables, and melty cheddar cheese. Itโs simple, hearty, and perfect for fall.
Ingredients
1 pound ground beef
1 onion, chopped
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 cup carrots, sliced
1 cup potatoes, diced
1 cup corn kernels
1 cup green beans, chopped
1 can (10.5 oz) cream of mushroom soup
1 teaspoon dried thyme
1 teaspoon dried parsley
1 cup shredded cheddar cheese
Instructions
1. Brown ground beef in a skillet over medium heat until no longer pink. Drain fat.
2. Add chopped onion and minced garlic. Sautรฉ until soft.
3. Transfer beef mixture to slow cooker.
4. Layer in carrots, potatoes, corn, and green beans over the beef.
5. In a bowl, mix soup with thyme, parsley, salt, and pepper. Pour over ingredients.
6. Gently stir to combine. Cover and cook on LOW for 6โ8 hours.
7. 30 minutes before serving, sprinkle shredded cheese on top.
8. Let melt and stand for 10 minutes before serving.
Notes
You can substitute ground beef with ground turkey or sausage.
Swap green beans with peas, butternut squash, or bell peppers.
Use cream of chicken soup for a twist on the flavor.
For extra creaminess, stir in a splash of heavy cream or milk.
